Summer Cobb Salad

  Fresh Flavours and a Rainbow of colours make up this fantastic summer salad

INGREDIENTs

  • 2 large boneless, skinless chicken breasts

  • 1 tablespoon olive oil

  • Salt and Pepper

  • 2 romaine hearts, chopped

  • 3 hardboiled eggs, peeled and chopped

  • 2/3 cup crumbled blue cheese

  • 2 avocados, chopped

  • 1 cup blackberries

  • 1 cup raspberries

  • 1 cup toasted almonds

  • Creamy lime and garlic salad dressing

 

 

DIRECTIONS

  1. Preheat the grill. Then rub the chicken breasts with oil, and salt and pepper liberally. Grill for 5 minutes per side over medium heat. Allow the chicken to rest for at least 5 minutes before chopping. Then cut into bite-sized pieces.

  2. Meanwhile chop the romaine lettuce, eggs and avocados. Place the lettuce on a large serving platter or bowl.

  3. Arrange all the toppings on over the bed of lettuce and serve with creamy lime and garlic salad dressing.
