Summer Cobb Salad
Fresh Flavours and a Rainbow of colours make up this fantastic summer salad
INGREDIENTs
2 large boneless, skinless chicken breasts
1 tablespoon olive oil
Salt and Pepper
2 romaine hearts, chopped
3 hardboiled eggs, peeled and chopped
2/3 cup crumbled blue cheese
2 avocados, chopped
1 cup blackberries
1 cup raspberries
1 cup toasted almonds
Creamy lime and garlic salad dressing
DIRECTIONS
Preheat the grill. Then rub the chicken breasts with oil, and salt and pepper liberally. Grill for 5 minutes per side over medium heat. Allow the chicken to rest for at least 5 minutes before chopping. Then cut into bite-sized pieces.
Meanwhile chop the romaine lettuce, eggs and avocados. Place the lettuce on a large serving platter or bowl.
Arrange all the toppings on over the bed of lettuce and serve with creamy lime and garlic salad dressing.
