Southwestern Spiced Grilled Pork Chops with Plum Jalapeno Salsa


 

INGREDIENTs

  • 3 tablespoons chili powder

  • 1 tablespoon ground cumin

  • 1 tablespoon ground coriander

  • 1 tablespoon dried oregano - preferably Mexican

  • 2 teaspoons onion powder

  • 2 teaspoons garlic powder

  • 2 teaspoons salt

  • 2 teaspoons freshly ground black pepper

    Salsa

  • 4 large plums - ripe but firm, pitted and chopped

  • 1 jalapeno pepper - seeded if desired

  • ¼ cup finely chopped red onion

  • ¼ cup chopped cilantro

  • 3 tablespoon honey - or to taste

  • 1 tablespoon lime juice

  • Salt - to taste

  • Pork Chops

  • 2 bone-in rib pork chops - (10-12 ounce)

  • Canola or olive oil - for grill

 

 

DIRECTIONs

  1. Combine all spice ingredients in a small bowl. Store in an airtight container.

  2. Combine all salsa ingredients in a small bowl.

  3. Preheat a grill to medium-high

  4. Lightly brush grates of the grill with a small amount of oil. Place the pork chops on the grill. Cook 4-5 minutes on the first side.

  5. Flip and cook an additional 2-3 minutes or until pork chops reach an internal temperature of 155 degrees.

  6. Serve chops with salsa
