Grilled Maple Salmon Salad


 

Ingredients

  • 2 4 oz. filets salmon

  • 2 tbsp maple syrup

  • 1 tbsp soy sauce

  • 1/4 tsp garlic powder

  • 1 pinch salt and pepper

    For the Salad:

  • 5 cups spring mix

  • 1/3 cup red onion, thinly sliced

  • 1/3 cup tamari almonds, chopped (can sub. with unflavoured roasted almonds, walnuts, or pecans)

  • 1/4 cup dried cranberries

  • 1/4 cup goat cheese, crumbled

  • 1 batch maple balsamic dressing

 

 

DIRECTIONS

  1. In a small bowl, whisk together the maple syrup, soy sauce, garlic powder, and salt.

  2. Place the salmon filets in a shallow dish and pour the marinade over the top. Cover and refrigerate for 30 minutes.

  3. Preheat your grill to medium-high heat, or if you're using an indoor counter-top grill, preheat it according to the manufacturer's instructions.

  4. If you're using an outdoor grill, lightly oil the grates to prevent the salmon from sticking. Remove salmon from the marinade and place it on the grill, skin-side down, and cook for about 3-4 minutes per side, or until the internal temperature of the salmon reaches 145°F.

  5. If you're using an indoor counter-top grill, simply place the salmon on the grill and cook for about 3-4 minutes per side, or until the internal temperature of the salmon reaches 145°F.

  6. Once the salmon is cooked through, remove it from the grill and let it rest for a few minutes before serving.

  7. Make the Maple Balsamic Dressing and set aside.

  8. Assemble the salads with spring mix, red onion, almonds, cranberries, goat cheese, and salmon. Drizzle the dressing over top, and serve.
