Grilled Shrimp with Mango Salsa


 

INGREDIENTS

For Salsa:

  • 2 large mangoes, ripe

  • ¼cup red onion, minced

  • ¼cup cilantro leaves, chopped

  • 3tbsp lime juice, fresh

  • 1tsp fresh ginger, minced

  • ½tsp salt

  • ¼tsp freshly ground black pepper

For Shrimp:

  • 1½lbslarge shrimp

  • 2tbsp soy sauce, reduced-sodium

  • 2tbsp orange juice, fresh

  • 2tbsp olive oil

 

 

DIRECTIONS

Salsa

  1. Combine the mangoes, onion, cilantro, lime juice, ginger, salt, and pepper in a bowl. Set aside.

Shrimp

    1. Rinse and drain the shrimp. Pat dry with paper towels.

    2. In a bowl, combine the shrimp, soy sauce, and orange juice.

    3. Let stand for 10 minutes.

    4. Prepare the grill, then oil the grill rack. Thread the shrimp onto metal skewers or wooden skewers that have been soaked in water for about 1 hour.

    5. Brush with oil and grill over medium heat, regularly brushing with the soy mixture, 3 to 4 minutes per side, until the shrimp are cooked through.

    6. Remove from skewers and place on a serving platter.

    7. Serve with mango salsa, and enjoy!
